A couscous recipe you will enjoy

- 1 onion
- 50g butter
- 250 g of carrots
- 250g turnip
- 250g courgettes
- 1 can of tomato paste
- 4-6 pieces of lamb
- 100 g of grapes
- 1 red pepper
- 1 green pepper
- 1 large can of peeled tomatoes
- 1 large can of chickpeas
- One half head of celery
- Harissa
- 1 fresh chilli
- Couscous spice
- Pepper
- Cayenne pepper
- 2 doses of saffron
Instructions
- Preparing the couscous:
- Peel the carrots, turnips, celery head, courgettes and cut into pieces.
- Clean everything and add the peppers cut into strips.
- Boil 75 ounces of water to which you add the tomato paste, a tablespoon harissa, a little couscous spices.
- In a couscoussiere, brown onion with butter. Once the onion browned, add the chopped vegetables and pour 30-40 ml of sauce from the pan.
- Add the chickpeas and tomatoes peeled. Mix together.
- Again add pepper, spices, harissa, saffron and pepper, to taste.
- Cook over low heat for 1 1/2 hour.
- Add the lamb, in the rest of the warmed sauce pan.
- Finally
Cook for 1 hour to 1 ½ hour, and prepare the couscous. Put it in the second compartment of the couscoussier to cook.
