A simple couscous recipe
This couscous recipe is meant to be very quick and also very delicious, the most important thing about it is that it is very easy to make.

- 4 courgettes
- 4 large carrots
- 4 turnips
- 2 fresh artichokes hearts
- 3 nice round and fresh tomatoes
- An onion
- 200g of beans, preferably fava beans
- 1 red pepper
- 1 small can of chickpeas
- Tomato paste
- 4-6 pieces of lamb
- Salt and pepper
- Harissa
- Spices for couscous (ras el anout)
- Hot paprika
- Olive oil or sunflower
- Average package couscous
- Butter
Instructions
- Now, let’s look at how to prepare this easy couscous recipe:
- Fry in a couscousiere with oil the lamb pieces, cover with water, add salt, spices and cook on low heat.
- Add the peeled and cut into large vegetables pieces (carrots, turnips, and artichokes) add the tomato and chickpea. Allow to simmer uncovered.
- When everything is cooked to perfection, wet with salty water the couscous, let rest, place the sieve of the couscousiere over the sauce so that the steam permeates the couscous semolina. When the steam is visibly passing through the couscous, crumble it in a separate bowl with water and olive oil, then put it back in the sieve above the sauce.
- When the couscous is cooked, add a good knob of butter in a separate dish and mix to fluff.
- Have enough couscous on each plate to form a dome and add the sauce, vegetables and meat in the center. Then, take a good ladle of sauce and mix a spoonful of harissa and set it in a bowl for people to use it as a complimentary hot sauce.
