Barley and fava bean couscous
This is another variation of the Moroccan barley couscous, this time, we are going to put fava beans, and they give a fantastic earthy flavor to this amazing and very popular Moroccan recipe.

Ingredients
- 6 tablespoons olive oil
- 1 onion
- 1 ground ginger
- Salt
- ½ a teaspoon pepper
- A pinch of saffron
- 1 teaspoon turmeric
- 1 pound of meat (chicken or beef)
- 2 small tomatoes
- Water
- 500 g barley couscous
- 3 carrots
- Fava beans, about 250 grams
- 2 turnips
- 1 small pumpkin
- One tablespoon of parsley
- One tablespoon of coriander, both herbs should be finely chopped
Instructions
- Now, for the preparation:
- In a large couscousiere, set on medium heat, add the oil, chopped onions, and spices
- Mix everything with a wooden spoon and cook the onion until soft
- Add your chicken or meat and add the grated tomatoes
- Add warm water to the couscousiere
- Add your fresh fava beans and cook
- When the meat is cooked, remove from the pot and place it in a container with a lid
- In a small saucepan, place the coriander, hot peppers, squash, zucchini, potatoes and sweet
- Add warm water to the couscous
- Place it in the top part of the steamer and cook for about 20 minutes
- Remove the couscous and place on a large container and add butter and salt.
- You need to fluff your couscous, in other words, you need to remove the nodes with a fork,
- Repeat this step two times without adding salt until it is perfectly cooked
- Place the couscous in a decorated serving tagine and put the meat in the center and the vegetables scattered around
- Pour some sauce from the couscousiere and put all the fava beans over the vegetables
- Serve hot.
