Beans couscous
This couscous recipe is ideal for vegetarians, however, if you would like to add meat, you can, 250 g of lamb should be more than fine.
Here are the ingredients you will need:
Ingredients
  • 500g couscous
  • 3 carrots
  • 2 medium potatoes
  • 2 turnips
  • 1 cucumber (medium size)
  • 2 courgettes
  • 200g green beans (if dry, soak in water for two days before using)
  • 1 tablespoon canola or olive oil
  • 3-4 green onions
  • 4 fresh tomatoes
  • Pepper
  • Salt
  • Paprika
  • Red chilli powder
  • Cinnamon
  • 2 green chillies
  • Harissa
  • Garlic (1 tablespoon)
  • 2 liters of water
Instructions
  1. Let’s prepare our beans couscous:
  2. In a saucepan, place the beans. Add water and cook for 30 minutes uncovered.
  3. Take a couscoussier and add the olive oil. Cut green onions into small pieces. Leave on low heat 5 to 10 minutes. Add the meat (if you would like to use it, cut into large pieces and salt and pepper beforehand) into the pot. Leave for 10 minutes, stirring occasionally.
  4. Add the fresh tomatoes cut into small pieces, 2 cups of water, paprika, garlic, harissa (optional), chili powder. Cover the pot and cook for 10 to 15 minutes.
  5. Take 2 hot peppers, pierce the middle with a knife and lightly add salt, and cook just for 15 minutes. Then remove. Take turnips, carrots, cucumber, potatoes and zucchini. Peel, wash and keep aside.
  6. Take the beans which are now ready. Add them to the sauce. Boil a while.
  7. Place the vegetables in the pot. Add 1.5 liters of water. Boil.
  8. Finally
    Place the couscous in a large bowl, pour the oil (enough to make it tenderer: 3-4 tablespoons of oil). Then work between your fingers for 3 minutes. Then place it in the top of the couscoussier, the steamer.
  9. You will have two floors: the first contains the beans and gravy, vegetables and the second one will have the couscous semolina.
  10. Keep cooking your couscous while taking it out from time to time when it is dry, fluff it with a little bit of oil and warm salted water, until it is tender and well cooked.
