Beef and fava beans tagine
This tagine dish is definitely one of my favorite, I just love fava beans and enjoy them so much, especially if they are well done and mixed with flavorful Moroccan spices like saffron.

- 3 tablespoons olive oil
- 1 onion, chopped
- 500 g of beef
- 3 cloves of garlic
- 1 tomato
- 1 teaspoon paprika
- 1/2 teaspoon pepper
- 1 teaspoon ground ginger
- 1 teaspoon turmeric
- A quarter of a teaspoon saffron
- Salt to taste
- Water
- Two slices of preserved lemon
- Olives for decoration
- 450 g of fresh or frozen fava beans
- 3 tablespoons chopped parsley
- 2 potatoes cut into wedges

You can either use a cooking tagine or a pot in order to prepare this recipe, with a tagine, it is going to take a much longer time and you need to keep adding water over and over, however, if you decide to use a pressure cooker, it is going to taste nearly the same and you are going to serve this dish quite quickly. - I’m going to give you the instructions for preparing this beans and beef tagine in the traditional way, using a clay Moroccan tagine.
- So, start by adding the oil and spices with the chopped onion to your tagine, very low heat.
- Then, add your meat and keep stirring.
- When the onion pieces have become soft, add your fava beans, herbs, garlic, and a little water, make sure you cover everything.
- Close the lid and let it cook for at least forty-five minutes on very low heat.
- When the meat and fava beans are nearly cooked, put strips of preserved lemon and olives all over your tagine and close the lid again.
- Keep cooking for fifteen minutes.
