Black olives and preserved lemon chicken tagine

- 4 chicken thighs
- A quarter of a teaspoon of saffron
- 1 teaspoon of ras el hanout
- 1 preserved lemon
- 1 onion
- 20 black olives
- 3 cloves of garlic
- 1 tablespoon chopped parsley
- 1 tablespoon chopped cilantro
- 2 tablespoons oil soup
- Salt and pepper
Instructions
- Now, let’s prepare our tagine:
- Take a preserved lemon, remove the pulp, leaving only the peel and cut into strips.
- Put the oil in the frying pan and roast well the thighs, salt and pepper. Remove from pan. Throw some fat and sauté sliced onion and finely chopped garlic. Add ras el hanout and saffron. Cook for 1 minute. Add chicken, strips of lemon, add water until the mid-thighs.
- Add olives and cook very slowly for 45 minutes.
- Of course, you can use a cooking tagine; you need then to put the preserved lemon strips and black olives on top when you are simmering.
