- 2 medium glasses of olive oil
- 10 green chilies or small peppers to taste
- 1 onion
- 5 large tablespoons of tomato paste
- 1 tablespoon salt
- Red chili powder (to taste 1/2 teaspoon to 1 tablespoon)
- 10-12 small carrots
- 500g squash or zucchini 4
- 4-5 medium potatoes
- Water
- 1 kg of semolina
- 1 large bream, according to personal taste, you can cut it into small pieces if you would like to
Instructions
- Now, let’s prepare our bream couscous:
- Pour the two glasses of oil in a large couscoussier, fry the peppers, then remove. Cut the onion into cubes and put them to fry 2-3 minutes, then add the tomato paste. Mix well, then add 2 cups of water, salt and chili powder. Simmer 5-7 minutes, then add water to about half of the couscoussier.
- While waiting for the broth to boil, peel the carrots into thin strips lengthwise and squash into 4 pieces and the potatoes in halves, once boiling, incorporate these vegetables. Cook over medium heat for about 40 minutes.
- Pour the couscous into a large bowl, add 1 tablespoon of olive oil and mix by hand. Pour 1 cup of water little by little into the semolina while continuing to mix with your hand slightly. Let rest for about 15 minutes and mix again for the grains to separate from each other, then put it in the top of the couscoussier, the steamer part.
- Let it steam from the sauce while it continues to cook for 15-20 minutes. At the 10th minute, add the bream with 1 green pepper and 2 teaspoons pepper.
- After 20 minutes, pour the couscous in a large dish, spread it, then remove the vegetables and fish sauce and put each in a separate dish.
- Mix the sauce with the couscous, let rest 3 minutes, then stir and let stand for 3 more minutes.
