Butternut couscous
This couscous recipe will change a lot your image of the usual couscous, it is very flavorful and I’m sure that you are going to like it.
Ingredients
- 30 ml olive oil
- Chanterelles to taste
- 200g butternut squash, diced
- 250g couscous
- 1 green onion, chopped
- 5 g dried basil
- 100g dried tomatoes in oil, chopped
- 250 ml water
- 100g parmesan
- Salt and pepper to taste
Instructions
- Now, let’s prepare our butternut couscous:
- Boil water. Remove from heat and add the couscous. Cover and leave to rise.
- In a skillet, heat the oil and sauté the chanterelles that you need to carefully clean, squash and dried tomatoes over medium heat.
- Add green onion and basil and cook until squash is tender. Then add the couscous semolina, grated cheese, salt and pepper.
- Finally, served hot or cold.
