Butternut couscous
This couscous recipe will change a lot your image of the usual couscous, it is very flavorful and I’m sure that you are going to like it.
Ingredients
  • 30 ml olive oil
  • Chanterelles to taste
  • 200g butternut squash, diced
  • 250g couscous
  • 1 green onion, chopped
  • 5 g dried basil
  • 100g dried tomatoes in oil, chopped
  • 250 ml water
  • 100g parmesan
  • Salt and pepper to taste
Instructions
  1. Now, let’s prepare our butternut couscous:
  2. Boil water. Remove from heat and add the couscous. Cover and leave to rise.
  3. In a skillet, heat the oil and sauté the chanterelles that you need to carefully clean, squash and dried tomatoes over medium heat.
  4. Add green onion and basil and cook until squash is tender. Then add the couscous semolina, grated cheese, salt and pepper.
  5. Finally, served hot or cold.
