Caramelized onion and raisins sauce – tfaya
This is the famous caramelized onion and raisin sauce, also known in Morocco as tfaya, which is very sweet and extremely flavorful; it is most used with couscous and tagine dishes. I hope you will like it. Here are the ingredients you are going to need:
Ingredients
- 1kg of red onions
- 3 cinnamon sticks
- Salt to taste
- Black pepper to taste
- A quarter of a teaspoon of saffron
- 50g butter
- 3 tablespoons of olive oil
- 50 to 100 g of dried sultanas, in some recipes, you can also use dried prunes
- 1 tablespoon of ground cinnamon
- 4 heaping tablespoons of sugar
Instructions
- Now for the preparation: Peel the onions and cut them into strips.
- Place in a large saucepan over medium heat.
- Add the butter, oil, cinnamon sticks, salt, pepper and saffron.
- Mix well and cook, stirring from time to time to not let the onions burn.
- When the onions are cooked through (they are soft to touch), add your raisins and ground cinnamon.
- Add sugar and increase the heat.
- Still stirring constantly, leave the sugar to caramelize slightly.
- All water must evaporate from the onions and the fat must help caramelize them.
- It’s ready when there is no more liquid, just good and delicious fat!
