Cardoon and beef tagine
Cardoon is a vegetable that is quite similar to celery. It makes a wonderful tagine that is very aromatic and has a fantastic lemon flavor; however, the cardoon stems must be fresh and very moist in order to make the perfect cardoon and beef tagine.
Here are the ingredients you are going to require:
Ingredients
  • 5 cardoons stems
  • 500 g of beef, cubed
  • 2 cloves of garlic
  • 2 onions
  • 1 tomato (deseeded)
  • Half lemon juice
  • Salt
  • Half a teaspoon of ground ginger
  • A pinch of saffron
  • Two tablespoons of vegetable oil
  • Half a cup of water
Instructions
  1. Now for the preparation:
    Wash the cardoons and remove the outer skin by scraping with a knife
  2. Cut into pieces about 3 inches long and put in a bowl of water (otherwise they will blacken)
  3. Add the oil in a preheated tagine and add the onions and tomato
  4. Place all other ingredients, while mixing them
  5. Add water lastly
  6. Cook over medium heat until the meat is tender and the cardoons are soft.
