Chicken and almonds pastilla
This recipe is difficult to make, but worth every second you spend preparing it, it is very famous in Morocco and is prepared on important ceremonies and occasions, you will certainly enjoy it.
These are the ingredients you will need:
Ingredients
  • 10 sheets of pastry
  • 1 chicken, cut into small pieces
  • 1 egg yolk
  • 100g melted butter
  • 1 onion, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon pepper
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • Pure saffron , to taste
  • 60ml vegetable oil
  • 1 liter of water
  • 200g of chopped parsley and coriander
  • 6 eggs
  • 250 g almonds
  • 150g icing sugar
  • 2 tablespoons orange flower water
  • Vegetable oil
  • 1 teaspoon cinnamon (to mix with the chicken when cooked)
  • For the garnish: 2 tablespoons of honey, cinnamon, icing sugar
Instructions
  1. Now let’s see the preparation:
    Put the oil in a preheated pan and add the onions
  2. Add the chicken, parsley , cilantro, and spices and mix very well
  3. Add the water, cover and cook for 45 minutes
  4. Soak the almonds in hot water and then peel off the skin
  5. Bake until they are golden
  6. Let it cool and place in a blender and blend
  7. Add the icing sugar and orange flower water. Mix until you get a paste
  8. Remove the chicken from the pot and add the eggs
  9. Stir over low heat. The sauce will thicken
  10. Cut chicken into small pieces and add cinnamon
  11. Cut pastry sheets for a rounded shape
  12. Put the oil in a round mold
  13. Butter the pastry sheets and place in a pan. Repeat for 4 more sheets
  14. Overlay the sheets while leaving the third of which exceeding the mold
  15. Put other sheets in the center of the mold
  16. Place chicken in the mold and cover with buttered foil
  17. Add the egg mixture over the sheets and cover with foil
  18. Then add the mixture of crushed almonds
  19. Brush the edges of the sheets overflowing with butter and fold each sheet to close the pastilla
  20. Brush the edge of a sheet with egg yolk and place on top sealing the sides
  21. Brush the surface with butter and bake at 350 F (180 C) for 30 minutes
    Decorate with icing sugar, cinnamon and some crushed almonds.
