Chicken and carrots tagine
This tagine may seem somehow new and very different from Moroccan cooking, but in fact, it is a very traditional recipe, it has been prepared in Moroccan kitchens for probably hundreds of years.
And here are the ingredients you are going to need:
Ingredients
  • 1 chicken, cut into pieces
  • 5 carrots cut into quarters (remove the center)
  • 2 onions, sliced
  • 3 tablespoons canola or vegetable oil, preferably olive oil
  • 1 teaspoon pepper
  • 1 teaspoon salt (to taste)
  • 1 teaspoon ground ginger
  • 2 tablespoons chopped parsley
  • 250 ml water
  • Pinch of saffron
  • Half lemon juice
  • One piece of preserved lemon
  • Olives (for garnish)
Instructions
  1. Now for the preparation:
    In a cooking tagine, pour the oil and add the onions, spices, lemon juice, parsley, chicken and preserved lemon
  2. Pour water and mix gently
  3. Cook for at least thirty-five minutes, while checking from time to time that the recipe is still moist
  4. When the chicken is cooked, add the carrots and olives (optional) and cook for fifteen minutes. Taste the sauce and season as needed (salt, pepper)
  5. Presentation: Place the chicken in the center in a decorated serving tagine, add the carrots on top and pour the sauce around.
