Chicken and carrots tagine
This tagine may seem somehow new and very different from Moroccan cooking, but in fact, it is a very traditional recipe, it has been prepared in Moroccan kitchens for probably hundreds of years.

Ingredients
- 1 chicken, cut into pieces
- 5 carrots cut into quarters (remove the center)
- 2 onions, sliced
- 3 tablespoons canola or vegetable oil, preferably olive oil
- 1 teaspoon pepper
- 1 teaspoon salt (to taste)
- 1 teaspoon ground ginger
- 2 tablespoons chopped parsley
- 250 ml water
- Pinch of saffron
- Half lemon juice
- One piece of preserved lemon
- Olives (for garnish)
Instructions
- Now for the preparation:
In a cooking tagine, pour the oil and add the onions, spices, lemon juice, parsley, chicken and preserved lemon - Pour water and mix gently
- Cook for at least thirty-five minutes, while checking from time to time that the recipe is still moist
- When the chicken is cooked, add the carrots and olives (optional) and cook for fifteen minutes. Taste the sauce and season as needed (salt, pepper)
- Presentation: Place the chicken in the center in a decorated serving tagine, add the carrots on top and pour the sauce around.
