Chicken and rutabagas tagine
Most people do not know what rutabagas are, they are simply yellow turnip roots, they are very famous here in Morocco because they cook very easily and they combine very well with potatoes and chicken.
So, in this tagine recipe, we are going to use rutabagas and potatoes, and here are the ingredients you are going to need:
Ingredients
  • Three tablespoons of olive oil
  • 1 onion, sliced
  • 4 pieces of chicken, preferably breasts and legs
  • 2 chopped cloves of garlic
  • 1 tomato cut into small pieces
  • Half a teaspoon of paprika
  • One teaspoon of turmeric
  • One teaspoon of pepper
  • One teaspoon of ground ginger
  • 1 cinnamon stick
  • 1 bay leaf
  • Some water
  • Potatoes
  • Rutabagas
Instructions
  1. Now let’s talk about how to prepare a delicious chicken and rutabagas tagine.
  2. First, cut your vegetables, and here, I mean potatoes and rutabagas, the shape doesn’t matter, but it is preferable that they are medium in size, not too thick and not too thin.
  3. Then, put your tagine on very low heat and add to it your oil, spices, garlic and onion, keep stirring to combine the aromas, just for some few seconds, and then add your chicken, again, keep stirring very well until the chicken is soaked with the oil and spices.
  4. Add a little water, don’t submerge the ingredients, just enough water to prevent sticking, and close the lid.
  5. The rule when using a tagine is to never be constrained by time, so, I’m not going to give you a precise amount of time for your meals to be ready, you should keep cooking your chicken until it is very tender and moist, if your tagine dries out, you can add some few tablespoons of water.
  6. When your chicken is soft and tender, not entirely cooked, add your vegetables on top of it and add about three tablespoons of water, close the tagine lid and let cook for as long as necessary, your vegetables must be soaked with the sauce from time to time in order to flavor them with the spices.
  7. And this is how you make a delicious chicken and rutabagas tagine.
