Chicken and vegetable tagines
This is probably one of the most popular tagine recipes in Morocco, it is very easy and does not require a very long cooking time.
Here are the ingredients you are going to need:
Ingredients
  • 1 whole chicken cut into pieces
  • 1 onion, cut into small pieces
  • 1 tomato, grated
  • Two tablespoons of chopped parsley
  • 2 chopped cloves of garlic
  • Salt to taste
  • Half a teaspoon of ground ginger
  • Half a teaspoon of pepper
  • A pinch of saffron
  • 2 carrots that you should cut into finger length strips
  • 1 zucchini that you should cut into finger length strips
  • 2 potatoes cut into wedges
  • Two tablespoons of vegetable oil
  • Water
Instructions
  1. The preparation:
    In a tagine, place the vegetable oil and the onion and garlic
  2. Add spices and parsley and mix
  3. Add the grated tomato and chicken pieces
  4. Place the vegetables on top of the chicken, you can be a little creative and play with the decoration
  5. Add a little water and cook over low heat. If it starts to stick during cooking, add a little more water
  6. When the chicken and vegetables are cooked, it is time to serve.
