- 100g chickpeas (you should soak them overnight)
- 2 onions
- 2 cloves of garlic
- 2 teaspoons chili
- 2 teaspoons of cumin
- 2 teaspoons coriander
- 2 tablespoons olive oil
- 2 tablespoons tomato paste
- 12 chicken thighs
- 4 carrots
- 2 turnips
- 4 courgettes
- 500 ml water
- 500 grams of couscous
- Salt
- Pepper
Instructions
- This is how to prepare this chicken couscous:
- Cook for 1 hour the chickpeas, or you can use canned ones.
- In a pan put olive oil and sauté the chopped onions, garlic and spices.
- Add the tomato paste and chickpeas, cover with water and simmer for 1 hour.
- Add the chicken and add water if necessary, everything must be covered, simmer for 20 min.
- Cut the vegetables into pieces.
- Add carrots and turnips and cook an additional 30 minutes, after 15 minutes of cooking, add the zucchini.
- Finally, prepare the couscous according to the instructions (there are a lot of instant couscous semolina you can buy).
