Chicken couscous
This is a simple chicken couscous you can prepare for dinner; it is delicious and very flavorful.
Here are the ingredients you will need:
Ingredients
  • 100g chickpeas (you should soak them overnight)
  • 2 onions
  • 2 cloves of garlic
  • 2 teaspoons chili
  • 2 teaspoons of cumin
  • 2 teaspoons coriander
  • 2 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 12 chicken thighs
  • 4 carrots
  • 2 turnips
  • 4 courgettes
  • 500 ml water
  • 500 grams of couscous
  • Salt
  • Pepper
Instructions
  1. This is how to prepare this chicken couscous:
  2. Cook for 1 hour the chickpeas, or you can use canned ones.
  3. In a pan put olive oil and sauté the chopped onions, garlic and spices.
  4. Add the tomato paste and chickpeas, cover with water and simmer for 1 hour.
  5. Add the chicken and add water if necessary, everything must be covered, simmer for 20 min.
  6. Cut the vegetables into pieces.
  7. Add carrots and turnips and cook an additional 30 minutes, after 15 minutes of cooking, add the zucchini.
  8. Finally, prepare the couscous according to the instructions (there are a lot of instant couscous semolina you can buy).
