This is a highly appreciated couscous recipe by the French people, in fact, in 2013, it was voted the third most delicious recipe in the country!
Yes, French people love couscous, but this recipe is not the authentic couscous because chicken drumsticks weren’t available to Moroccans and Algerians, the ones who invented couscous, they relied on beans, especially chickpeas, nevertheless, using chicken drumsticks is very popular nowadays, and I’m going to show you how to make the best chicken drumstick couscous.
Here are the ingredients you need:
Ingredients
  • 6 chicken drumsticks
  • 2 tablespoons spicy couscous (preferably the one made in morocco)
  • 1 tablespoon harissa
  • 1 tablespoon of parsley (you can also use frozen parsley)
  • 1 tablespoon tomato paste
  • 1 onion
  • 2 carrots
  • 1 zucchini
  • 1 tablespoon olive oil
  • 2 glasses of water
  • For the topping:
  • 120 g raw couscous semolina
  • 120 ml of water + 1 tablespoon olive oil
Instructions
  1. Now, let’s talk about making chicken drumstick couscous:
  2. Marinate for 1 hour the chicken drumsticks with a one and a half tablespoon of oil, 1 tablespoon couscous spices, salt, pepper, parsley (or cilantro for those who like it).
  3. Fry the chicken drumsticks for 5 minutes, add the onions and spices, salt and pepper. Cook for 2 minutes. Add the tomato paste and harissa, and mix very well.
  4. Cover the drumsticks with two glasses of water. Cook for 30 minutes over medium heat.
  5. Add the zucchini, and carrot strips, add water if necessary.
  6. Cook again for an hour over medium heat.
  7. Finally, boil water and in a bowl, mix the semolina with a tablespoon of oil and then add boiling water, stir to loosen the grains and let rest while covered.
  8. In a shallow dish, place two to three tablespoons of couscous, then your chicken drumsticks and lastly your vegetables and sauce.
