Chicken tagine casserole
Here are the ingredients you need to prepare this very delicious chicken tagine casserole:
Ingredients
- 2 large chicken breasts
- 4 potatoes
- 2 large carrots
- 2 tomatoes
- 1 bell pepper
- 2 large shallots
- 2 eggs
- 2 tablespoons olive oil
- 1/2 cup of water
- 2 tablespoons curry
- 1 tablespoon cumin
- 1 tablespoon paprika
- 1 tablespoon of thyme
- parsley
- garlic
- Salt
- Pepper
Instructions
- Now, let’s prepare our tagine:
- In a tagine, heat 2 tablespoons olive oil, 2 sliced shallots, a small bunch of chopped parsley, a clove of minced garlic and a small handful of thyme or herbes de Provence. Add the chicken breasts cut into cubes and stir. Cover and cook over low heat until the meat is cooked.
- During cooking, peel vegetables (peel the tomatoes and empty them of their seeds), cut into pieces (the smaller they are the quicker they are going to cook).
- First add the potatoes and carrots and other vegetables. Add the spices and 1/2 cup of water.
- Cook for about 30/45 minutes over very low heat, watching carefully if it lacks water. If necessary, add 1/2 cup of water.
- Cook 2 eggs, in order to get hard-boiled eggs. When they are cooked, peel them and cut them in half, add them on top of the dish.
