Chicken tagine with dried fruits

- 1 large chicken
- 5 lemons (well washed and brushed)
- 1 tablespoon fresh cilantro
- 1 tablespoon chopped parsley
- 1 tablespoon chopped mint
- 1 tablespoon chopped ginger
- 1 onion
- 1 clove garlic
- Saffron half a gram
- 1 teaspoon paprika
- 8 dried apricots
- 8 prunes
- 2 tablespoons raisins
- Two tablespoons olive oil
- 1 teaspoon salt
Instructions
- Now, let’s prepare our chicken tagine with dried fruits:
- The day before, prepare the preserved lemons: 2 lemons cut into slices 1 cm thick, sprinkle with salt and let drain for 10 hours. Cover them with a towel and let marinate in one cup olive oil overnight paper.
- Also the day before, cut the chicken into 8 pieces, put them in a large bowl, add the juice of 3 lemons, cilantro, parsley, mint, ginger, onion and chopped garlic; sprinkle with saffron and paprika. Stir, cover and put in the refrigerator.
- Drain the chicken, reserving the marinade. In a cooking tagine, add 5 ml oil and lightly brown the chicken for 15 minutes. Then arrange them according to your taste, add the marinade, lemon slices and dried fruits.
- Cover and cook for as long as needed, the chicken must be tender and very flavorful.
