Chicken with olives and preserved lemons
Although you can cook this recipe in any cooking pot you have, not just a tagine, it is inspired by Moroccan cooking because it uses preserved lemon.

- 2 chickens of about 800 g
- 3 white onions
- 2 cloves of garlic
- 5 tablespoons of sunflower oil
- 1 tablespoon chopped parsley
- 1 tablespoon chopped cilantro
- 250g pitted green olives
- 1 preserved lemon
- Spice mixture
- 2 teaspoons ginger
- 2 teaspoons of turmeric
- A quarter of a teaspoon saffron
- 1 pinch of grated nutmeg
- Salt
- Pepper
Instructions
- Now, let’s prepare our chicken with preserved lemons:
- Cut the chicken into pieces, peel, wash and chop the onions; Peel, wash and crush the garlic, put oil to heat in a pot, sauté the chicken with onions and garlic.
- Add spices, parsley and cilantro, stir together with the salt, pepper and cook over low heat 10 minutes. Pour 1 liter of water and bring to boil; simmer over medium heat for about 40 minutes.
- Stir in olives and sliced lemon and cook for 10 minutes. Place all in a tagine or casserole dish; if necessary, move the tagine in the oven 10 minutes before serving so as not to crack it.

Serve with couscous and sliced almonds, toasted on top (the more, it brings crisp).
