Chicken with olives and preserved lemons
Although you can cook this recipe in any cooking pot you have, not just a tagine, it is inspired by Moroccan cooking because it uses preserved lemon.
Here are the ingredients you will need:
Ingredients
  • 2 chickens of about 800 g
  • 3 white onions
  • 2 cloves of garlic
  • 5 tablespoons of sunflower oil
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped cilantro
  • 250g pitted green olives
  • 1 preserved lemon
  • Spice mixture
  • 2 teaspoons ginger
  • 2 teaspoons of turmeric
  • A quarter of a teaspoon saffron
  • 1 pinch of grated nutmeg
  • Salt
  • Pepper
Instructions
  1. Now, let’s prepare our chicken with preserved lemons:
  2. Cut the chicken into pieces, peel, wash and chop the onions; Peel, wash and crush the garlic, put oil to heat in a pot, sauté the chicken with onions and garlic.
  3. Add spices, parsley and cilantro, stir together with the salt, pepper and cook over low heat 10 minutes. Pour 1 liter of water and bring to boil; simmer over medium heat for about 40 minutes.
  4. Stir in olives and sliced lemon and cook for 10 minutes. Place all in a tagine or casserole dish; if necessary, move the tagine in the oven 10 minutes before serving so as not to crack it.
  5. Finally
    Serve with couscous and sliced almonds, toasted on top (the more, it brings crisp).
