Chickpeas and resins couscous
This was my first encounter with couscous, I had it five years ago and I fell immediately in love with it.
I’m sure you will like it too.
Here are the ingredients you will need:
Ingredients
  • 1 kg of meat
  • 1 kg couscous
  • 1 kg of carrots
  • 1/2 kg of turnip
  • 100g canned chickpeas
  • 100g raisins
  • 1 zucchini
  • 1 pumpkin
  • 2 onions
  • 3 tomatoes
  • A bouquet garni of parsley and coriander
  • Salt
  • Pepper
  • A pinch of saffron
Instructions
  1. Now, let’s prepare our chickpeas and raisins couscous:
  2. Put the meat in a couscoussier, add the oil, salt, pepper, saffron and a glass of water. Put on medium heat and add the onions and tomatoes. Let cook for 5 minutes, stirring and drizzle 2 liter of water and boil. Add chopped turnips and cook , while the lid is closed, after adding the zucchini in the bottom of the couscoussier.
  3. Add the couscous, wet it with water, let rest and work with hands, adding a spoonful of oil, put it in the top of couscousier and let steam for 10 minutes.

    After adding in the lower couscousier zucchini, pumpkin, chickpeas, raisins, bouquet garni and cook everything for 20 minutes , serve.
