Cinnamon and apricot couscous
You can add to this couscous recipe any meat you would like, but personally, I prefer to leave it as it is, meatless.

- 1 large carrot
- 3 tomatoes
- Seven dried apricots
- 1 clove garlic
- 1 glass of orange juice (about 20 cl)
- 1 cinnamon stick
- Fresh ginger
- Coriander

- Cumin
- Salt
- Pepper
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar

- Semolina with cinnamon:
- 2 cups semolina couscous
- 2 glasses of water

Instructions
- Now, let’s prepare our cinnamon and apricots couscous:
- Finely chop the onions. Cut carrots into small dices. Cut the tomatoes into pieces and cut into halves your dried apricots.
- Make a caramel with honey and deglaze with the vinegar.
- Add the roasted caramel, almonds, apricots, salt and pepper in a saucepan. Pour orange juice over vegetables. Season the vegetables to your taste (ginger into pieces, coriander, cumin, pepper, cinnamon pieces).
