Courgettes and chicken tagine
This tagine has a very special flavor; it is because the courgettes, when fully cooked, are going to simply melt in your mouth.
Here are the ingredients you are going to need:
Ingredients
  • 2 tablespoons of vegetable oil, preferably extra-virgin olive oil
  • 500 g of chicken
  • 1 onion, cut into strips
  • 2 chopped cloves of garlic
  • 1 tomato, grated
  • Half a teaspoon of pepper
  • One teaspoon of ground ginger
  • 1 teaspoon of salt
  • A pinch of saffron
  • Some water
  • 3 tablespoons of chopped parsley
  • 2 potatoes cut into wedges (this is optional)
  • 3 one zucchini cut into strips
  • One piece of preserved lemon
Instructions
  1. The preparation:
    In a tagine, place the oil, onion, tomato, garlic, preserved lemon, parsley, spices (salt, pepper, ginger, saffron) and chicken
  2. Mix together and start cooking
  3. Cook for a few minutes over medium heat and add the cut or sliced zucchini
  4. Cook until chicken and zucchini are cooked and you are done.
