Couscous stuffed zucchini
This is not a traditional Moroccan recipe, it is a modern one, but I’m sure that you are going to love it.

- 1 large round or 4 small zucchinis
- 120 g of fine seed couscous
- 1/2 red bell pepper
- olive oil
- Hot sauce, preferably harissa, to taste
- Salt
Instructions
- Preparing your couscous stuffed Zucchini:
- Wash and core the zucchinis. Mix the zucchini pulp and pepper. Mix with cooked couscous, oil, salt and harissa. garnish the zucchini with this mixture.
- In a pressure cooker, place the zucchini in the steamer basket. Pour a little water and put it higher position. Close the pressure cooker.
- As the steam escapes, reduce the heat and simmer for 12 minutes
- Finally
Serve immediately.
