Couscous stuffed zucchini
This is not a traditional Moroccan recipe, it is a modern one, but I’m sure that you are going to love it.
Here are the ingredients you will need:
Ingredients
  • 1 large round or 4 small zucchinis
  • 120 g of fine seed couscous
  • 1/2 red bell pepper
  • olive oil
  • Hot sauce, preferably harissa, to taste
  • Salt
Instructions
  1. Preparing your couscous stuffed Zucchini:
  2. Wash and core the zucchinis. Mix the zucchini pulp and pepper. Mix with cooked couscous, oil, salt and harissa. garnish the zucchini with this mixture.
  3. In a pressure cooker, place the zucchini in the steamer basket. Pour a little water and put it higher position. Close the pressure cooker.
  4. As the steam escapes, reduce the heat and simmer for 12 minutes
  5. Finally
    Serve immediately.
