Couscous tabbouleh

- 150g couscous
- 60 g of mozzarella
- 60 g of fresh goat cheese
- 4 artichoke hearts
- 2 medium tomatoes
- 1 fennel bulb
- 50g pitted black olives
- 1 lemon
- 4 tablespoons olive oil
- 2 tablespoons chopped chives
- Salt
- Pepper
Instructions
- Now, let’s prepare our couscous tabbouleh:
- Steam your artichoke hearts for about 15 minutes. Then cool.
- Peel and remove the seeds from the tomatoes, and cut into small cubes all the other ingredients (artichokes, cheese, fennel, olives).
- Prepare your couscous in a little hot water for a few minutes. Once cooled, fluff with a fork.
- Finally, make a sauce with lemon, salt, pepper and olive oil. Put into individual cups in successive layers each ingredient. Add the sauce and serve fresh.
