Couscous tabbouleh
This is a very delicious couscous recipe that you are going to certainly enjoy, you can have it as a salad, and it is very refreshing and filling as well.
Here are the ingredients you will need:
Ingredients
  • 150g couscous
  • 60 g of mozzarella
  • 60 g of fresh goat cheese
  • 4 artichoke hearts
  • 2 medium tomatoes
  • 1 fennel bulb
  • 50g pitted black olives
  • 1 lemon
  • 4 tablespoons olive oil
  • 2 tablespoons chopped chives
  • Salt
  • Pepper
Instructions
  1. Now, let’s prepare our couscous tabbouleh:
  2. Steam your artichoke hearts for about 15 minutes. Then cool.
  3. Peel and remove the seeds from the tomatoes, and cut into small cubes all the other ingredients (artichokes, cheese, fennel, olives).
  4. Prepare your couscous in a little hot water for a few minutes. Once cooled, fluff with a fork.
  5. Finally, make a sauce with lemon, salt, pepper and olive oil. Put into individual cups in successive layers each ingredient. Add the sauce and serve fresh.
