Couscous with raisins and chickpeas
This is a very tasty couscous recipe that you can prepare either with meat, preferably lamb or no meat at all, vegan, it is very delicious and I’m sure that you are going to enjoy it.

- 1 kg of package couscous
- 1 chicken or 1 kg of meat (lamb shoulder or veal shank)
- 500g raisins
- 1 glass filled with chickpeas, soaked the previous day
- One and a half kilogram of onion
- Tablespoon pepper
- 1/2 teaspoon saffron (preferably crushed)
- 150g butter for the broth
- 100g butter to coat the couscous when cooked
- 5 liters of water
- Salt
Instructions
- The preparation:
- Put the water in the couscoussier, add 2 chopped onions, chickpeas, chicken or meat cut into pieces, salt, pepper, saffron and butter
- Put on fire and boil
- Place the top of the couscoussier filled with couscous on the boiling pot
- After steam starts to escape of from the top, cook for 30 minutes
- Then remove the couscous, pour it into the large plate, crush slightly to separate the grains, let it cool and pour cold water, aerate it and repeat the process until the grains are swollen
- Let rest so that it absorbs all the water
- Check that the chicken is cooked and remove
- 30 minutes before serving, cut the onions into chunks and pour into the pot still on fire
- Add the cleaned and washed raisins
- Boil and put the couscous in the top of the couscous, place it back on the pot
- When steam start to escape, remove it and pour it into the large plate, add butter, mix well and add as much broth as couscous can absorb, while stirring
- Then place in a large round dish, make a dome shape, forming a well in the center which you deposit the chicken or meat, chickpeas, raisins and onions.
