Curry chicken couscous

- 100g chickpeas (soak them overnight)
- 2 onions
- 2 cloves of garlic
- Curry powder to taste, personally, i use two tablespoons, but if you would like your chicken couscous to be a little more spicy, you can even use more.
- 2 tablespoons olive oil
- 2 tablespoons tomato paste
- 12 chicken thighs
- 4 carrots
- 500 ml water
- 500 g couscous semolina
- Salt
- Pepper (to taste)
Instructions
- Now, let’s prepare our curry chicken couscous:
- Cook for 1 hour the chickpeas. In a pan put olive oil and sauté the chopped onions, garlic and then add your curry powder.
- Add the tomato paste and chickpeas, garlic, cover with water and simmer for 1 hour. Add the chicken and add water if necessary, everything must be covered, simmer for 20 min.
- Cut the carrots into pieces, add and cook an additional 30 minutes.

Prepare the couscous according to the instructions (there are a lot of quick-cooking couscous semolina you can use). And serve the chicken and vegetables over a bed of couscous, and then cover with the sauce.
