Delicious couscous spices soup
This soup is inspired from the multitude of spices we use with couscous, we will also add to it many North African flavors and Mediterranean vegetables.
Here are the ingredients you will need:
Ingredients
  • 200g chickpeas (organic if possible)
  • 1 small sweet potato cut into very small dice
  • 200 g organic tomatoes pulp
  • 200g red and green peppers, finely diced
  • 1 onion, cut into small dice
  • 1 teaspoon ras el hanout
  • 1 pinch ground cumin
  • 1 large clove of garlic
  • parsley
  • One vegetable bouillon cube
  • Chervil and cilantro chopped (to taste)
Instructions
  1. Now, let’s prepare our couscous spices soup:
  2. Dissolve bouillon cube in 1 liter of water; add the tomato pulp, onion and garlic. Bring to a boil and cook for 5 minutes.
  3. Add the spices, peppers, sweet potatoes into cubes and cook for 5 minutes. Add chickpeas and simmer until vegetables are tender but not pureed.
  4. Finally
    Correct the seasoning with salt if necessary, garnish with chopped herbs and serve with toasted country bread and a drizzle of olive oil.
