Duck breasts couscous
If you have never tried duck breasts with couscous, then you are in for a big surprise, I’m sure you will love this recipe very much.
Here are the ingredients you are going to need:
Ingredients
  • 2 onions
  • 2 cloves of garlic
  • 4 tablespoons honey
  • 12 prunes
  • 6 dried apricots
  • 1 red pepper, canned
  • 1 packet of sweet spices scented couscous tipiak, if it is not available, just use any brand of instant couscous and add to it ras elhanout and cinnamon, just a few pinches
  • 200g dried duck breast
  • 3 sprigs parsley
  • 1 small can of chickpeas
  • 50 cl chicken stock
Instructions
  1. Now, let’s prepare our duck breasts and couscous:
  2. Slice the onions and fry in olive oil in a skillet. Drizzle with honey and continue to return to caramelize, then add broth and peeled garlic.
  3. Cover and simmer over low heat.
  4. Put prunes and apricots 1 hour in warm water. Cut the peppers into strips.
  5. Prepare the couscous according to the instructions on the package.
  6. Once the couscous is ready, pour it into a pan with a knob of butter.
  7. Cook for 5 minutes over low heat, and then add the pepper strips, fruit and drained chickpeas. Reheat.
  8. Fry the duck breasts in the pan a few moments.
  9. Finally
    Place the couscous in a hot dish. Remove the duck breasts and sprinkle with parsley before serving.
