Duck tagine with vegetables and preserved lemon
Duck isn’t a very popular ingredient in Morocco, nevertheless, it is very huge in France and this is where this recipe comes from.
Here are the ingredients you will need:
Ingredients
  • 4 duck legs
  • 200g shelled fresh peas
  • 4 carrots
  • 2 courgettes
  • 20 small apples
  • 1 bunch spring onions
  • 2 lemons
  • olive oil
  • 1 bunch cilantro
  • 1 teaspoon of turmeric
  • 1 teaspoon meat spice
  • 1 teaspoon pepper 5 bays
  • 1 teaspoon mustard seeds
  • 1 cup of water
  • Salt
Instructions
  1. Now, for the preparation:
  2. Preheat the oven to 180 ° C .Heat a pot of salted water to a boil and put the peas to cook for about 3 minutes.
  3. Drain and put them into a bowl of cold water. Drain and set aside.
  4. Wash the potatoes and cook them in a pan of cold salted water about 10 minutes after boiling. Peel the onions and set aside
    Wash zucchini and cut them into slices. Peel, wash and cut the carrots into rounds. Keep all vegetables in a separate bowl.
  5. Heat a little olive oil in a skillet over medium heat. Fry the duck legs with the onions, turning occasionally. Let grill for about 20-30 minutes.
  6. Rinse the preserved lemons under running water, cut into pieces, and then add them to the pan. Add crushed pepper, mustard seeds, turmeric and meat spices. Pour the water, mix well, then add all the chopped vegetables. Cover the pan and simmer in the oven for 45 minutes.
  7. Finally
    Chop the coriander and after the 45 minutes, add it to the pan and cook 15 minutes. Adjust seasoning if necessary with a little salt. Enjoy hot.
