Easy couscous recipe
I used to prepare this couscous recipe before learning how to make it the Moroccan way, it is quite easy and it will impress your guests, guaranteed.
Here are the ingredients you will need:
Ingredients
  • 1 kg medium couscous
  • 1.5 kg of lamb shoulder
  • 3 courgettes
  • 6 carrots
  • 3 turnips
  • 2 onions
  • 1 fresh tomato
  • 3 celery stalks
  • 400g can chickpeas
  • 3 tablespoons tomato paste
  • 5 tablespoons oil
  • 2 tablespoons ras el hanout
  • 1 teaspoon cumin
  • 100g butter
  • Salt and pepper
Instructions
  1. Now, for the making of our easy couscous recipe:
  2. Put 3 liters of cold water in a Dutch oven or a couscousiere. Add meat, onions, chopped celery, salt, pepper, cumin, ras el hanout, oil, fresh and concentrated tomatoes. Simmer the mixture.
  3. Cover the couscous semolina with water, then drain it and let it rest for 10 minutes.
  4. Separate the grains by rubbing them between the palms of your hands and then steam in the top of the couscousiere until steam escapes from the semolina.
  5. Cut the vegetables into pieces; add the carrots and turnips to the broth.
  6. Put the couscous into a large bowl, moisten slightly with water, then work in your hands (if it’s hot use a fork) and add salt.
  7. Put it on the top of the couscousiere again.
  8. Let rise, and when the semolina is dry, separate with your hands or a fork in a large bowl, while adding some few drizzles of water and oil so as there are no more lumps and then return it to the top of the couscousiere.
  9. When the vegetables are almost cooked add the zucchini and taste for salt.
  10. When the vegetables are cooked, add the chickpeas, and simmer for 2 minutes.
  11. Finally, put the couscous in a dish and work with butter.
  12. Put the cooked couscous in a deep dish, add the meat on top and then add the broth.
