Essaouira chicken tagine
I’ve had this chicken tagine in Essaouira – Morocco at some friends, it was gorgeous.
However, to prepare this chicken tagine, you are going to need a deep tagine, if you don’t have it, you can use any deep cooking pot you have for repairing the chicken.

Ingredients
- 1 chicken
- 150 g onions (1 or 2 depending on size)
- 10 cl of olive oil
- 1 bunch of parsley
- 1 bunch cilantro
- A few cloves of garlic
- 1 pinch of ginger
- 4 eggs
- 1 lemon
- 1 pinch saffron
- Salt and pepper
Instructions
- Now for the preparation:
- Prepare garlic and onion, chopped finely and fry in oil.
- Add chicken and some parsley, cilantro and spices.
- Add a little butter, cover with 1 liter of water and cook 30-40 minutes.
- After cooking, cut the chicken into pieces and place in a tray.
- Prepare the filling. Mix 4 eggs, remaining parsley and cooking sauce.

Garnish the chicken with this mixture and bake until you get a beautiful golden color (like a gratin).
