Essaouira chicken tagine
I’ve had this chicken tagine in Essaouira – Morocco at some friends, it was gorgeous.
However, to prepare this chicken tagine, you are going to need a deep tagine, if you don’t have it, you can use any deep cooking pot you have for repairing the chicken.
Ingredients
  • 1 chicken
  • 150 g onions (1 or 2 depending on size)
  • 10 cl of olive oil
  • 1 bunch of parsley
  • 1 bunch cilantro
  • A few cloves of garlic
  • 1 pinch of ginger
  • 4 eggs
  • 1 lemon
  • 1 pinch saffron
  • Salt and pepper
Instructions
  1. Now for the preparation:
  2. Prepare garlic and onion, chopped finely and fry in oil.
  3. Add chicken and some parsley, cilantro and spices.
  4. Add a little butter, cover with 1 liter of water and cook 30-40 minutes.
  5. After cooking, cut the chicken into pieces and place in a tray.
  6. Prepare the filling. Mix 4 eggs, remaining parsley and cooking sauce.
  7. Finally
    Garnish the chicken with this mixture and bake until you get a beautiful golden color (like a gratin).
