Fish couscous
Unlike what you may think, this couscous isn’t very popular in Morocco, apart from some coastal cities where it is quite common, but when talking about the traditional Moroccan couscous, fish is never an ingredient to include.
Nevertheless, this recipe is very fun to make and quite delicious if you like fish.

Ingredients
- 3 fish (sea bass or grouper)
- 300 g of carrots
- 3 small potatoes
- 150 g of tomato concentrate
- 200g courgettes
- 300 ml olive oil
- Fourth cabbage
- 50 g chickpea
- Salt and cumin
- Paprika to taste
- 40 g harissa
- 50 g chopped garlic
- 700g couscous
- parsley
- 2 onions, chopped
- 200 g turnip
Instructions
- Let’s make our fish couscous:
- Prepare in advance by cutting the fish into large pieces. Marinate in this mixture: harissa, cumin, salt and parsley.
- In the bottom of a couscousiere, put the chopped onion and a cup and a half of olive oil. Once the onions are blanched, add the tomato paste, a glass of salt water, garlic, cumin, paprika or harisa. Leave for 5 minutes over low heat. Then add the marinated fish with two or three glasses of water. Boil for 15 minutes.
- As soon as the fish is cooked, remove it with a little of the cooking water and put it in a baking oven. Brush with olive oil and brown in the oven for 15 to 20 minutes.
- Wash the vegetables and cut into two or three pieces depending on size. Cook the carrots and turnips first then the potatoes and finish with cabbage (zucchini and chickpeas will be added at the end of cooking). Add 2 or 3 cups of water or enough to cover the vegetables and cook over medium heat.
- Meanwhile, sprinkle the couscous with a half cup of olive oil. Mix well and sprinkle with plenty of salted water. Allow the couscous time to absorb the liquid, then place it in the top of the couscoussier.
- Finally Once the couscous has cooked, after about 20 minutes, remove from the steamer and moisten with a glass of water for the second time, it should be put in a larger bowl and set aside.
- Then, add the fish sauce over the couscous and the fish pieces on top.
