Ingredients
- 1 cup of uncooked couscous
- 1 tomato, thinly sliced
- 3 chopped shallots
- 1 carrot, grated
- Canned sliced black olives to taste
- 1/2 a pepper of your desired color
- 1/3 cup feta cheese, cut into small cubes
- Salt and pepper to taste
- 1 teaspoon white wine vinegar
- 1 tablespoon oregano
Instructions
- Now, let’s make our Greek couscous salad:
- Cook one cup of couscous according to the method of cooking in the packing. (usually it is one part of couscous to one part of boiling water).
- Add all the other ingredients and mix.
- Let rest for at least 1 hour in the fridge before serving.
- And that’s it!
- All quantities are to taste; you can adjust this recipe to your liking. This couscous salad is eaten cold as légé (light) meal or a side dish.
