Green squash tagine

Green squash tagine
This is a traditional Moroccan tagine recipe that you can share with your family members; it is very delicious and earthy.
The ingredients:
Ingredients
  • 2 tablespoons olive oil
  • 500 g of beef
  • 2 leeks
  • 1 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1/2 teaspoon pepper
  • 1/2 teaspoon saffron
  • 1 teaspoon turmeric
  • 1/4 teaspoon mace powder
  • 2 tablespoons chopped parsley
  • 4 cloves of garlic
  • 1 cup water
  • 4 tomatoes
  • 1 green squash
  • 3 potatoes
Instructions
  1. The preparation:
    In a small bowl, take all your spices and mix them with one tablespoon of olive oil
  2. Peel your leeks and mince them
  3. Add your diced tomatoes
  4. Add your oil and spices to the tagine on low heat
  5. Add your meat and stir for two minutes in order to let the meat absorb the flavors, then add your leeks and tomatoes and water
  6. Cook until the meat is tender
  7. Keep checking from time to time to see that the preparation is not dry
  8. Cut your green squash is into four pieces each, keep them at room temperature in water so as not to lose their color and freshness
  9. Peel and cut your potatoes into large wedges
  10. When the meat is half done, add the potato wedges on top
  11. When the potatoes are nearly cooked, add the green squash pieces
  12. Close the lid and keep cooking until everything is well cooked.
