Green squash tagine
This is a traditional Moroccan tagine recipe that you can share with your family members; it is very delicious and earthy.

- 2 tablespoons olive oil
- 500 g of beef
- 2 leeks
- 1 teaspoon salt
- 1/2 teaspoon ground ginger
- 1 teaspoon paprika
- 1/2 teaspoon pepper
- 1/2 teaspoon saffron
- 1 teaspoon turmeric
- 1/4 teaspoon mace powder
- 2 tablespoons chopped parsley
- 4 cloves of garlic
- 1 cup water
- 4 tomatoes
- 1 green squash
- 3 potatoes
Instructions
- The preparation:
In a small bowl, take all your spices and mix them with one tablespoon of olive oil - Peel your leeks and mince them
- Add your diced tomatoes
- Add your oil and spices to the tagine on low heat
- Add your meat and stir for two minutes in order to let the meat absorb the flavors, then add your leeks and tomatoes and water
- Cook until the meat is tender
- Keep checking from time to time to see that the preparation is not dry
- Cut your green squash is into four pieces each, keep them at room temperature in water so as not to lose their color and freshness
- Peel and cut your potatoes into large wedges
- When the meat is half done, add the potato wedges on top
- When the potatoes are nearly cooked, add the green squash pieces
- Close the lid and keep cooking until everything is well cooked.
