Grilled onion couscous
This couscous recipe is so easy to make and so delicious that I really wonder why I couldn’t found this on any cooking websites!
It was given to me by my sister two years ago and I have been cooking it since then.
You can use it as a salad or a main dish, but personally, I prefer to use it as an entrée.

- Three small peeled red onions
- Five garlic cloves, unpeeled
- 2 tablespoons olive oil
- One teaspoon of ground cayenne pepper
- 250g instant couscous
Instructions
- Now, let’s make our grilled onion couscous:
- Preheat the oven to 210 ° C and lightly grease an oven dish with olive oil.
- Cut the onions into quarters after peeling them then place with the garlic in a single layer in the oven dish, brush with oil. Cook, turning occasionally, for 45-50 minutes, or until browned. Cool and then peel the garlic.
- Bring 625 ml water to a boil in a medium pot. Add and stir in the couscous and the ground cayenne pepper. Remove from the heat, cover and let rest for 5 minutes.

Spread couscous on a plate. Arrange the grilled onions and garlic on top and you are done.
