Grilled rock salmon and parsley couscous
If you love rock salmon, you will enjoy this couscous recipe a lot.
Here are the ingredients you will need:
Ingredients
  • 1 length of rock salmon (about 350 g)
  • 4 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 teaspoon espelette pepper
  • 1 cup couscous semolina
  • A bouquet of about 40 strands of curly parsley
  • Salt
  • Freshly ground pepper
Instructions
  1. Now, let’s prepare rock salmon and parsley couscous
  2. In a plastic container, mix 3 tablespoons of olive oil with soy sauce and Espelette pepper. Season with salt and pepper. Place the washed and dried rock salmon. Close the box and shake in all directions to coat the fish. Place in the fridge for at least 3 hours, shake the box again from time to time.
  3. In a bowl, add the couscous. Drizzle with 2 glasses of water and a tablespoon of olive oil. Salt and pepper. Cook for 2 minutes in the microwave, full power. After two minutes, separate the grains of semolina by mixing with a fork. Recook 2 minutes in the microwave.
  4. You can possibly add 2 or 3 tablespoons of olive oil.
  5. Wash the parsley and cut into thin strips. Then mix it with couscous.
  6. Finally
    Heat a non-stick pan. Put in the rock salmon and cook over high heat for about 10 minutes. Serve the fish on top of parsley couscous.
