- 3 medium sized zucchinis.
- 4 small aubegines
- 1 midsize red pepper
- 1 midsize green pepper
- 1 medium red onion unpeeled
- 1 head of garlic separated into unpeeled cloves
- 2 tablespoons olive oil
- 250g instant couscous
- Hot sauce:
- 2 teaspoons of cumin powder
- 1 teaspoon ground coriander
- 1/2 teaspoon dehydrated chili
- 1/4 teaspoon caraway seeds
- 60 ml olive oil
- 2 tablespoons white wine vinegar
- 1/4 teaspoon sugar

- Now, let’s make our grilled vegetables couscous:
- Preheat the oven to 210 ° C. Lightly grease a dish with olive oil.
- Cut the zucchini and eggplants lengthwise. Cut the peppers into quarters and remove the seeds and membranes. Cut the onion into quarters. Place vegetables and garlic in a single layer in the dish and brush with oil. Cook, turning vegetables occasionally, for 45-50 minutes, or until browned. Cool. Peel the onion and garlic.
- Bring 625 ml water to a boil in a medium saucepan. Stir in the couscous. Remove from heat, cover and let rise for 5 minutes. Then let cool.
