Grilled vegetables couscous
Today, I would like to present to you a healthy couscous recipe, it is very light and very easy to make.
Here are the ingredients you will need:
Ingredients
  • 3 medium sized zucchinis.
  • 4 small aubegines
  • 1 midsize red pepper
  • 1 midsize green pepper
  • 1 medium red onion unpeeled
  • 1 head of garlic separated into unpeeled cloves
  • 2 tablespoons olive oil
  • 250g instant couscous
  • Hot sauce:
  • 2 teaspoons of cumin powder
  • 1 teaspoon ground coriander
  • 1/2 teaspoon dehydrated chili
  • 1/4 teaspoon caraway seeds
  • 60 ml olive oil
  • 2 tablespoons white wine vinegar
  • 1/4 teaspoon sugar
Instructions
  1. Now, let’s make our grilled vegetables couscous:
  2. Preheat the oven to 210 ° C. Lightly grease a dish with olive oil.
  3. Cut the zucchini and eggplants lengthwise. Cut the peppers into quarters and remove the seeds and membranes. Cut the onion into quarters. Place vegetables and garlic in a single layer in the dish and brush with oil. Cook, turning vegetables occasionally, for 45-50 minutes, or until browned. Cool. Peel the onion and garlic.
  4. Bring 625 ml water to a boil in a medium saucepan. Stir in the couscous. Remove from heat, cover and let rise for 5 minutes. Then let cool.
  5. Preparation of hot sauce: put spices in a saucepan and cook for 1 minute over low heat, while stirring. Mix spices and other ingredients in a shaker with the vinaigrette.
  6. Finally
    Spread couscous on a plate. Arrange vegetables on top and pour the hot sauce over and you are done.
