kefta eggs tagine
This is the authentic kefta eggs tagine that you can enjoy in the old medina of Marrakesh.
Here are the ingredients you will need:
Ingredients
  • 6 eggs
  • 1 kg of minced meat
  • 500 g of tomatoes
  • 250 g onion
  • 4 teaspoons of tomato paste
  • 1 teaspoon cumin
  • 1 teaspoon sweet paprika
  • 1 pinch of white pepper
  • 1 pinch of ginger
  • 1 pinch saffron
  • 1 pinch of cinnamon
  • 1 pinch salt
  • 2 teaspoons parsley or cilantro
  • 10 cl of olive oil
  • 20 ounces of water
Instructions
  1. Now, let’s prepare our authentic kefta and eggs tagine:
  2. Prepare the ingredients: salt the meat, shape into balls of equal size for in order to get an even cooking time. You can perfume your meat with ras el hanout
  3. Dice the tomatoes and onions. Chop coarsely your parsley or cilantro.
  4. Put all the spices in the tagine, cumin, paprika, white pepper, ginger, saffron, cinnamon, salt. Add parsley, 4 tablespoons of tomato paste.
  5. Add the tomatoes and onions. Then add 10 cl of olive oil and 20 ounces of water. Cover and simmer for 5 minutes over high heat, if you don’t have a heat dispenser, only simmer on low heat for fifteen minutes.
  6. After 5 minutes, add the meatballs, cover and cook 20 minutes over medium heat.

    Break 6 eggs. Cover again and simmer over high heat until they are cooked.
