Kefta tagine
It seems that in Morocco, this dish is called “bachelors’ tagine.” What for? Because it cooks quickly and does not need to have specific ingredients. Basically all you need is ground meat, eggs, tomatoes and onion.

Ingredients
- 400g minced beef
- 3 eggs
- 4 tomatoes
- 1 onion
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon ground cumin
- 1/2 bunch parsley
- Two tablespoons of olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Now, let’s prepare our Kefta tagine:
- Mix the ground beef, 1/4 chopped onion and half the bunch of parsley. Add chili powder, cumin and 1/2 Tsp salt and mix everything and then form small balls, put aside.
- In the tagine, blanch the tomatoes, add the chopped onion (you can also grate them), chopped parsley, remaining salt, pepper and oil.
- Cook over low heat for 5 to 10 minutes, adding 1/2 glass of water if the tomatoes are not juicy enough.
- Then add the meatballs and cook for 20 minutes over low heat.
- Break the eggs into the tagine (like when you make fried eggs) and simmer for 2 minutes. Remove immediately from the heat and let the eggs cook just by the residual heat from the tagine.

Sprinkle with a little salt and pepper if necessary and Voila.
