This khlii courgette and okra tagine recipe requires, of course, khlii, which is a preserved meat in fat, it is very salty and also extremely aromatic, and unfortunately, you don’t have many substitutes for this important ingredient in this recipe.

Ingredients
  • 1 kilogram of courgettes
  • 250 grams of okra
  • 1 onion
  • 200 grams of khlii
  • 2 tablespoons of khlii fat
  • 1 cup of paprika
  • Chili powder (according to your taste)
  • 2 glasses of water
  • Salt to taste
  • Pepper (to taste)
Instructions
  1. The preparation:
    Finely chop the onion, throw in the tagine with khlii fat, khlii pieces, paprika, crushed pepper, salt and cover with water.
  2. Cook them for ten minutes on low heat.
  3. Cut the zucchini into 4 lengthwise (do not peel)
  4. Rinse zucchini pieces and put them in the boiling tagine water
  5. Then remove the khlii pieces
  6. Cut both ends of the okra, rinse and place in a separate saucepan.
  7. Add salt and cook with a little zucchini juice preparation (as they are rinsed, cook immediately to prevent them from becoming sticky after cooking)
  8. On the other hand, cook zucchini on low heat and reduce until you get a creamy sauce
  9. Serve hot, okra and pieces khlii over zucchini
