kofta and potatoes tagine
This is one of the most typical Moroccan tagine dishes you can make, it is very nutritious and filling as well, and all the family is going to enjoy it.
Here are the ingredients you are going to need:
Ingredients
  • 300 g of minced beef
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 2 teaspoons of paprika
  • 1 teaspoon of cumin
  • 3 tablespoons olive oil
  • 3 tomatoes, diced
  • 1 teaspoon of minced garlic
  • 1 teaspoon of turmeric
  • 1 teaspoon of ground ginger
  • 1 bay leaf
  • A pinch of saffron
  • 2 potatoes, sliced into large pieces
  • One tablespoon of chopped parsley
  • 3 eggs
Instructions
  1. Now, let’s prepare our kofta and potatoes tagine.
    In a large bowl, add your minced beef, spices and parsley and mix together, then form meatballs.
  2. Now, using a cooking tagine over low heat, add olive oil and your diced tomatoes and spices of your choice and keep stirring.
  3. Then, add your meatballs and sliced potatoes on top of them.
  4. Cover everything, and don’t worry about water, the meat and potatoes have got enough, cook for at least fifteen minutes on very low heat, and avoid checking from time to time as it is going to get rid of the water in the tagine!
  5. When the potatoes are cooked, break three eggs on top of the sauce and the potatoes and cover again for five minutes over very low heat.
