Lamb and potato tagine
This is an everyday Moroccan tagine recipe that people love so much, it is very simple to make, extremely delicious, and most importantly very filling, especially during a cold day.

Ingredients
- 4 potatoes
- 1/2 kilo of lamb
- 2 onions
- 1 teaspoon pepper
- Salt to taste
- 1 teaspoon ground ginger
- 2 tablespoons chopped parsley
- 2 chopped cloves of garlic
- 125 ml water
- 1/4 teaspoon saffron
- 1 teaspoon cumin
- 2 tablespoons olive oil
- 1 tomato
- Olives (optional)
Instructions
- Now for the preparation:
In a cooking tagine, put the onions and chopped tomato, parsley, garlic, spices, oil and mix with a wooden spoon - Add the lamb and turn on all sides so that it absorbs the spices
- Add a little water so that the lamb doesn’t stick to tagine
- Cook on low heat
- When the meat is nearly cooked, add the potatoes, cut into quarters
- You can add some olives on the top when the cooking is done and the potatoes and meat are well cooked and tender
- Serve in a serving tagine by putting the lamb in the center, spread the potatoes around it and then pour the sauce over and olives on top, or you can serve the tagine as it is.
