Lamb with potatoes and carrots tagine
This is a rustic recipe in Morocco, it is prepared by the poor, and usually, they do not add as much lamb as in this one, however, it is very tasty and of excellent price.
Ingredients for 3 people
Ingredients
  • 500g lamb pieces
  • 500 grams of potatoes
  • 4 carrots
  • 2 tomatoes
  • 1 onion
  • 2 cloves of garlic
  • Ginger
  • Olives
  • Cumin
  • Paprika
  • Chopped parsley
Instructions
  1. Now, let’s prepare our tagine:
  2. In a large cooking tagine, fry the chopped onion and the chopped meat in olive oil.
  3. Peel the potatoes and carrots, cut into large pieces, add peeled tomatoes cut into cubes, salt, pepper, minced garlic and a little ginger. Cover with water and cook covered for 45 minutes, add some cumin, paprika, keep watching for water, your tagine must not dry out.
  4. Then add chopped parsley.
  5. Cook for another 15-20 minutes if necessary.
  6. Finally
    Add olives and reduce the sauce until you get a smooth thickness.
