Meat and quincew tagine
When you hear the expression “Morocco is the land of enchantment”, it is true, there are many things in Morocco that are going to astonish you and even surprise you to a very high and pleasant degree.
For example, Moroccans add a variety of vegetables and even fruits in their tagines, and the wonderful thing is that most of their tagines are quite delicious and easy to prepare.
If you cannot find quinces, you can substitute them with cooking apples, although the taste is going to be little different.
Here are the ingredients you are going to need:
Ingredients
  • 500 grams of veal, cut into cubes
  • 1 tomato, grated
  • Two tablespoons of vegetable oil
  • Half a teaspoon of pepper
  • 500 grams of quinces
  • 1 onion, diced
  • 1 clove of garlic
  • Salt to taste
  • Pinch of saffron
  • One teaspoon of ground cinnamon
  • Water
Instructions
  1. Now let’s talk about the preparation:
  2. In a tagine, heat oil and add the onion
  3. Cook until the pieces become soft and then add the tomato, garlic, spices and meat
  4. Mix together and add a little water if it sticks or is too dry
  5. Cook the meat until it is half cooked and then add the quinces cut into halves
  6. Continue cooking until everything is cooked, and don’t forget to add water when your tagine is dry.
