Meatballs couscous
Children are going to love this couscous recipe tremendously because it has meatballs and lots of flavors and colors, here are the ingredients you will need:
Ingredients
  • 1 kg of average couscous semolina
  • 1 piece of beef (600 g)
  • 500g minced beef
  • 2 slices of stale bread
  • 2 egg yolks
  • 2 cloves of garlic
  • parsley
  • flour
  • Salt
  • 4 courgettes
  • 6 carrots
  • 3 turnips
  • 1 large can of chickpeas
  • Saffron
Instructions
  1. Now, let’s prepare our meatballs couscous:
  2. Cook the piece of beef in a pressure cooker. Simmer 45 minutes after the first whisper.
  3. Meanwhile, peel the vegetables and cut the zucchini into large chunks.
  4. Start preparing the meatballs: in a bowl, mix the minced meat mixed with the bread, egg yolks, garlic, parsley and salt. Make balls the size of a golf ball then roll in flour.
  5. Once the meat is cooked, add the broth,carrots, meatballs and turnips.
  6. In a bowl, mix semolina with a bowl of hot water into which you’ve diluted saffron. Mix, then add a good knob of butter and fluff with your hands, if it is hot, use a fork. Place the couscous in the top of a couscoussier to steam.
  7. Finally
    Add in the bottom of the steamer zucchini, chickpeas and the meat. Cook for an hour.
