Merguez and chicken couscous
This is an Algerian couscous recipe, in Morocco, people don’t have a merguez culture, in other words, people here do not eat spicy sausages as often as in Algeria.
Ingredients
  • 8 chicken drumsticks
  • 12 merguez
  • 1 eggplant
  • 2 courgettes
  • 6 carrots
  • 1 long turnip
  • 3 tomatoes
  • 2 small cans of tomato paste
  • olive oil
  • 2 beef bouillon cubes
  • 3 tablespoons ras el hanout
  • 500g canned chickpeas
  • Harissa
Instructions
  1. Now, let’s prepare our chicken and merguez couscous:
  2. Peel the carrots, turnips and tomatoes. Cut into cubes the eggplant and zucchini.
  3. Brown the drumsticks in olive oil. Then pour 1.5 water and add the beef bouillon cubes, tomato paste, carrots, turnips, tomatoes, eggplants and 3 tablespoons ras el hanout. Simmer for about 25 minutes.
  4. Then add zucchini and drain and rinse beforehand chickpeas.
    Let simmer 20 minutes.
  5. Finally, Cook the sausages in a pan and add at the end of cooking.
