Merguez couscous
This is a very famous couscous recipe in Algeria, they are the ones who invented merguez in the first place and they love it, in fact, they love it so much that they put even in their couscous recipes.
Nowadays, adding merguez to couscous is a tradition in many families and even restaurants.
These are the ingredients you will need:
Ingredients
  • 500g of sausages , merguez, cook it on a grill or pan
  • 1 kg of tomatoes
  • 1 kg of carrots
  • 4 aubergines
  • 5 zucchini
  • 3 peppers
  • 4 onions
  • 3 tablespoons olive oil
  • 30g butter
  • 25g sugar
  • 1 pinch of cinnamon
  • 1 jar of tomato puree
  • 2 teaspoons allspice
  • 6 coriander seeds
  • 2 teaspoons mint
  • Salt
  • Pepper
  • 1 kg of semolina
  • Harissa
Instructions
  1. Now, let’s make our merguez couscous:
  2. In a pan, heat the olive oil. Add the onions, sauté until browned, then add the butter, sugar and a pinch of cinnamon and cover with water up to cook about 10 minutes.
  3. Add the tomato paste, allspice, coriander seeds, mint, salt and pepper cover and cook over low heat. After 20 minutes, add the peeled and sliced carrots. Cook for 20 minutes, then add the other washed and chopped vegetables and cook for 45 minutes.
  4. Finally
    Prepare the couscous according to directions on the package. In a separate sauce pan make a hot sauce with harissa, 1 teaspoon of harissa to 3 tablespoons of vegetable broth, the one you have prepared.
  5. Add the merguez on top of the couscous.
