Minced meat and vegetable tagines
Here in Morocco, people called this tagine the mincemeat fingers; it is because the minced meat is going to be shaped into fingerlike forms.
The spices makes this recipe very delicious, usually, it is made with simple spices like cumin and paprika, but you can also add curry powder, cinnamon, and even nutmeg which will give this recipe a fantastic flavor.
Here are the ingredients you need:
Ingredients
  • 500g of minced beef
  • 1 carrot
  • 1 onion
  • 2 tomatoes
  • 1 tablespoons olive oil
  • Salt
  • Pepper
  • 4 spices (pepper, nutmeg, cloves and cinnamon) used just the tip of the knife for each spice
  • 1 tablespoon chopped cilantro
  • 75 g of canned chickpea
  • 1/2 teaspoon of curry powder
  • 150 g of green beans
  • 1 cube of beef flavoring, which is optional
  • 1 teaspoon chopped parsley
  • 1 tablespoons of tomato paste
  • 750 ml water
  • A pinch of sugar
Instructions
  1. Now for the preparation:
  2. Peel and dice the carrots
  3. Chop the onion and crush the tomatoes with a fork
    In a cooking tagine, cook the onion with olive oil until it becomes soft
  4. When soft, place half the onion in a bowl and add to it the minced meat
  5. Add salt, pepper, half of the four spices, and coriander to the meat.
  6. Mix and form large finger shapes with minced meat
    In the cooking tagine, add the beans, carrot, salt, curry, the other half of the four spices, beef flavoring , parsley.
  7. Stir and let cook
  8. Wait 5 minutes before adding the crushed tomatoes, tomato paste and sugar
  9. Add water and cook for 20 minutes, until chickpeas are soft and well cooked
  10. Add the fingers of meat and cook for 15 minutes
  11. Halfway through, turn the fingers to cook evenly.
