Mussels tagine
Morocco is a very rich country, it has a large diverse culture when it comes to food, especially sea products, and although this tagine is not as famous as typical lamb tagine, it is very delicious nonetheless.

Ingredients
- 500 grams of mussels
- 3 tomatoes, grated
- 3 tablespoons of chopped parsley
- 3 tablespoons of chopped coriander
- 3 tablespoons of tablespoons olive oil
- 1 teaspoon of ground cumin
- 1 teaspoon of paprika
- 1 teaspoon of minced garlic
- Half a teaspoon of salt
- Olives, which are optional and only used for decoration
- Two slices of preserved lemon cut into small pieces
- Four tablespoons of lemon juice
Instructions
- Now for the preparation:
Wash and clean the mussels. Leave to drain. - In a cooking tagine, fry the tomato in oil, add spices, parsley, cilantro and garlic
- Cook for thirty-five minutes on low heat, and add water if necessary
- Add the mussels, lemon juice, preserved lemon and olives
- Simmer for thirty minutes, or until the mussels are cooked, serve hot.
