Okra potato chicken tagine
Like the southern American food, Moroccan cuisine uses a nice amount of okra, in fact, this very healthy vegetable is still in high demand when it is in season, the prices go up very quickly.

Ingredients
- 1 chicken, cut into pieces
- Two tablespoons of vegetable oil, preferably olive oil
- One teaspoon of salt
- A quarter of a teaspoon of ground ginger
- Half a teaspoon of pepper
- A pinch of saffron
- Two tablespoons of chopped parsley
- 1 tomato, grated
- 1 onion, cut into strips
- Boiling water
- 3 potatoes (cut into chunks)
- Half a cup of okra (you need to remove the tip)
Instructions
- The preparation:
In a pan or tagine, place all the ingredients in order one after the other (except vegetables). If you use a tagine, add all the ingredients including vegetables and cook over low heat for 1 h 15 - Mix and cook at pressure for 20 minutes (turn off the heat and wait until the pressure is neutral before opening)
- Add the potatoes and okra and cook at pressure for 5 minutes
- Presentation: Place the chicken in the center with the pieces of potatoes around it. Place the okra in the center and the sauce over the whole ingredients.
